Bacon is staple at many breakfast tables, a perfect complement to a cheeseburger and more and more being brought into the World of deserts. Well we are about to take bacon to a new level of decadence! These recipes may take a bit of time to perfect but will take your love for bacon to a whole new level!

Bacon Wrapped Poutine
This is decadent, over the top and perfect for the bacon lover in your life. It takes a bit of time to construct and may be trial and error situation (this is why I would double cook the fries for my next attempt). Save your time and buy a good quality fresh poutine if you like, but like I said crispy fries will be the key to this so make your own poutine.

2lbs of bacon (thin sliced to regular sliced and depending on size you may require more bacon)
1 C of good quality cheese curds (use more or less if you like)
½ C thick gravy
½ lbs French fries (cooked extra crispy…use what you need)
Sea salt and Pepper to taste
Set your BBQ with a smoke box or smoker to 200F
Take a round cake pan and start laying out strips of bacon in a circular pattern with the ends hanging over the edges of the pan.
Cook your fries (I suggest a double fry to get them really crispy)
In a bowl, add your cheese curds and gravy to make your poutine.
Spoon some of your poutine into the center of the bacon layered cake pan. You need to ensure there is enough overhang to fold all the strips over the top so do not over stuff it.
Wrap any opening with additional bacon (secure it with a tooth pick if need be)
Place the wrapped poutine on an elevated wire rack inside the cake pan (keeps it out of the grease and prevents the grease from leaking into your BBQ)
Smoke using indirect heat for about 30 minutes before removing from the cake pan (be careful of the grease.) This will allow it to set and crisp up enough to handle without it falling apart. If it is still loose, leave it to smoke for an additional 30 minutes before this next step.
Place the set bacon wrapped poutine over a drip tray and continue to smoke until the exterior is the desired crispiness for the bacon.
Remove and enjoy!

This next recipe will also take time because each onion ring needs to be individually wrapped with bacon. It can take 2 slices per onion ring so make sure you have enough bacon on hand and the onion slices are not too larger (tennis ball sized is ideal). Make a dipping sauce and treat your guests to a unique BBQ treat.
Applewood Smoked Bacon Wrapped Onion Rings
3 lbs bacon (thin sliced to regular sliced)
24 medium to large onion rings cut ¼ inch thick
2 C BBQ sauce (your choice)
1 C of mayo
1 Tbsp Cajun seasoning
Wrap each onion ring with bacon (can take up to 2 strips per ring and consider a toothpick to secure them)
Set smoker or BBQ with smoke box to 200F.
Place rings on upper rack off direct heat with a drip pan below to catch the grease.
Baste with BBQ sauce every 30 minutes and smoke for 90 minutes or until bacon is crispy.
Mix Cajun seasoning with mayo (add hot sauce for more of a kick) and serve as a side dipping sauce.
